Bake Your Own 3-Ingredient White Cake Cookie


Although these white cake cookies are actually made from cake mix that you can easily buy from a nearby grocery store, they can turn into a melt-in-your-mouth goodness when paired with White Chocolate Buttercream – which is absolutely amazing.

The one who discovered the recipe wasn’t actually planning on naming it white cake cookies. They just started out as a plain and simple Cake Mix with White Chocolate Buttercream. However when she tasted it, the cookies just tasted like white cakes. Of course, who could resist a good white cake, right?

It’s easy to create these delicious masterpieces with a cake mix you can buy in the store. However, these can also be created from scratch and it is recommended to use Sugar Cookie recipe. Simply pair it with White Chocolate Buttercream and it would do the work. It won’t necessarily have the exact same outcome but the results are still a great treat.

To make these cookies, here are what you’ll need:

  • White cake mix cookie recipe (below)
  • White chocolate buttercream recipe (below)
  • 1/8 measuring scoop
  • Cookie sheet
  • Parchment
  • Small offset spatula

White Cake Cookies

Ingredients:

  • 1 package white cake mix
  • 3 egg whites
  • ½ cup vegetable oil

Instructions:

  1. In a large bowl, combine the cake mix, eggs and oil with a hand-held mixer for about 2 to 3 minutes. There are instructions on the cake mix box but disregard that for this recipe.
  2. Take your ice cream scoop and with that, scoop out the cookie batter you created and place it on a cookie sheet that is lined with parchment paper. Make sure you allow at least a couple of inches in between scoops as the batter will spread on its own.
  3. Bake at 350° F (175° C) for 8 minutes. You don’t want to bake the cookies brown.

And now here’s how you do the White Chocolate Buttercream:

White Chocolate Buttercream

Ingredients:

  • 2 sticks (226g or ½ pound) unsalted butter, softened
  • 12 ounces white chocolate, melted and cooled slightly
  • 1 cup confectioner’s sugar
  • ¼ tsp. pure almond extract

Instructions:

  1. Put the butter in a large bowl and beat it with a handheld electric mixer in medium speed. Beat until the butter for 1 to 2 minutes or until the butter is creamy.
  2. Pour the white chocolate and beat the mixture. Make sure the white chocolate is still creamy and warm.
  3. Add the confectioner’s sugar and almond extract. Lower the speed of the mixer and beat the whole buttercream mixture. Scrape the sides and the bottom of the bowl. Do this until the mixture is light and fluffy.

To make the cookies, you will want to bake the cookies first and then the buttercream. Set aside the cookies so it will cool.

The buttercream should be made with care. Melting the white chocolate is a bit tough as it is temperamental but if you’re used to melting chocolates, this would be easier to do.

A pro tip from the creator of white cake cookie: when heating the white chocolate using the microwave, set the power first to 30% and then heat the chocolate for 1 minute. Then, have 10-second increments while stirring the chocolate in between each heating. This will help make sure that the chocolate would not seize and isn’t lumpy.

When the cookies are cooler, you can now spread the buttercream with an offset spatula. If you don’t have that, you can also use a butter knife or a spoon.
